Scaling Mauby Production: From Traditional Craft to Turnkey Industrial Solutions

Mauby is a traditional Caribbean beverage widely consumed across the region, particularly in Barbados, Trinidad and Tobago, and Saint Lucia.

It is made by boiling the bark of the “mauby tree” (also known as snakewood) along with spices such as cinnamon, cloves, nutmeg, and vanilla. Orange peel and fresh ginger are sometimes added as well. The mixture is then sweetened with sugar and allowed to undergo fermentation.

Mauby has a distinctive bittersweet flavor, reminiscent of root beer, with a pronounced bitter aftertaste. It is often naturally carbonated through fermentation and is popular for its purported health benefits, including lowering blood pressure and improving digestion.

A traditional small-scale method for making Mauby is roughly as follows:

1. Place dried bark, whole dried spices (such as cinnamon and bay leaves), and freshly chopped ginger into a large brewing bag.
2. Bring the mixture to a boil and let it boil for one hour.
3. Immediately after boiling, mix in a large amount of brown sugar. The mixture becomes viscous. Allow it to cool.
4. Once cooled, gradually incorporate the viscous mixture in portions while adding water, and check the sugar content with a refractometer until it reaches 27–30 °Brix.
5. Let the mixture stand at room temperature for one to two days until a white foam (kraeusen) forms on top. This indicates that fermentation has begun.
6. Fill the fermented mixture using a hand-operated filling pump or PET/bottle/can filling machines.
7. Allow the bottles to sit at room temperature (between 27 and 32 °C) until they become firm to the touch, indicating carbonation.
8. Deliver to the client the same day and place immediately into cold storage (not freezer) to slow down further fermentation.
9. The shelf life of the product is approximately three months under appropriate storage conditions (2 °C).

For larger production capacities, we also offer various upgrade options and solutions to make the process easier, more efficient, and more consistent. These include a temperature control system that maintains optimal production temperatures by regulating heating and cooling using a PT100 sensor for real-time temperature measurement and adjustment. Additional upgrades include efficient removal of spent solids, rapid temperature regulation, automated equipment cleaning, and customized filling systems.

For the process described above, we can provide a complete turnkey project solution, which generally includes the following equipment:

1. Kettle – available with electric heating tubes, a steam jacket, or direct firing (electric heating has the lowest cost but carries relatively higher risks).
2. Pump – for transferring the prepared mixture to an open fermenter.
3. Piping and platform system – to be discussed based on specific requirements.
4. Heating supply system – to be connected to the kettle.
5. Cooling system – includes a chiller connected to a glycol tank and heat exchanger to supply chilled glycol for rapid temperature reduction.
6. Control system – for managing tank temperatures and starting/stopping pumps and motors.
7. Filling system – as needed.

If you are interested in producing this Mauby beverage or upgrading from artisanal to professional, large-scale production, SDET is the quality supplier where you can confidently stop and receive a customized Mauby production solution.
